Bringing texas flavors to you.
So as it goes, I have tried many different barbeque joints and felt like something wasn’t right. In about 2007 or so I borrowed my neighbors small electric smoker and attempted to make a brisket for my birthday. Well that did not go well. The stall was an unknown, the flavors were wrong, and it sucked. I didn’t want to give up.
Since then my brothers and I took a trip to Dallas and we all experienced the best barbeque and brisket we ever had. I was hooked and needed to make this myself. I have spent countless hours watching Youtube videos, masterclass videos, and reading books (the only time i read books by the way).
My smokes have evolved. The brisket has too. Now i can proudly say its the closest to Texas I have had. I want to share this experience with everyone so my plan is to move to pop-ups and a food truck. Slow and steady just like the brisket and I will get there.
The pizza is a add on bonus. Been learning that slow and steady. This coming from a guy as a teenager working in a pizza joint who could not stretch pizza to save my life. Somehow the restaurant didn’t close from my poor pizza.
